Paleo Crepes

Growing up, one of my favorite Saturday morning activities was when Dad took over the kitchen and would make breakfast for my mom and us four kids. While the typical breakfast was eggs, bacon, and hash browns, my favorite breakfast was when Dad would whip up batches of Polish nalesniki, or crepes. It was quite an undertaking, often using two or three burners at a time on the stove since there were plenty of hungry mouths to feed. We would fight for them as they were being made, spooning gobs of jelly or jam, rolling them up, and eating them faster than he could make them.

Although I am now grown and Dad isn’t around anymore to tempt my tastebuds with the old family recipe, my sisters have both perfected the art of nalesniki. So naturally, when they make it, I will eat it once in a while, you know, for purely nostalgic reasons..

However, since flour, milk, and sugar are necessities for this delicacy and none of which are staples in my diet anymore, I have been on a search to find a replacement recipe that still brings the comfort food feeling without the inevitable carb coma.

Enter Against All Grain Tortilla recipe. With a small tweak of adding some vanilla extract, and serving with a side of bacon, this was an epic win in my kitchen.

Paleo Nalesniki (Polish Crepes)

Ingredients
Instructions
  1. Mix all ingredients except for coconut oil in a bowl. Let sit for ten minutes to allow coconut flour to absorb wet ingredients, then mix again. (I prefer to whisk).
  2. Lightly grease pan with coconut oil (or fat of your choice; but coconut oil flavor seems to work well with this!)
  3. Meanwhile, simmer frozen raspberries in a small saucepan and heat on low. Berries will breakdown into a liquidy “jam”
  4. Use 1/4 cup of batter at a time and pour into the center of the pan. Proceed to spread the batter into a thin layer (I grab the pan handle and shake to spread. I am sure there is a more proper way to do this, but this is how my Dad always did it).
  5. Let one side cook for about a minute, then flip (carefully) and cook the other side for about 20-30 seconds.
  6. Transfer to a plate and avoid eating them while you repeat the steps above with the remaining batter.
  7. Pour raspberry filing into center of finished crepes, fold them up, and top with more berries.
  8. Enjoy!

Other paleo-friendly topping ideas could include strawberries or blueberries, baked apples, banana slices, almond butter, and more!

I’ve actually been sitting here wracking my brain trying to think of what I would have to modify recipe wise of things I loved from my childhood. My favourite breakfasts were always bacon and eggs (no need to change that) and dinner as a kid, I guess it would have been fried fish (just change the type of oil). My family have always been boring, plain eaters so there was nothing ever really special. The only thing that I would love to have would be my mum’s stuffing from Thanksgiving and Christmas. My sister has tried to re-create it and has apparently come close, but I haven’t been home to try it. If I were to try to make it here I think it would be impossible. Trying to find soy-free bread is a huge challenge. And I think gluten free bread as stuffing probably would taste gross.

Yes, this should be perfect for a lower-carb treat! Not sure what you do about fruit, but could spread a nut butter on it instead maybe?

You know, I was really excited to read this recipe until you said it wouldn’t involve the traditional ingredients. I’m glad I stuck with you and kept reading because even your adaptation sounds absolutely delicious! I’ve never used coconut flour, and to be honest haven’t seen it in stores here in Costa Rica, but I’d still love to give these a try. Would it be blasphemous to ask you for a link to a more traditional (flour-included) recipe?

These taste good but do not use whole eggs in place of the egg whites. They did not stay together and had to be thrown away 🙁

I had trouble with these staying together especially when I tried to flip them. What size pan did you use? I tried a 6 inch and and 8 inch. This is one of my favorite breakfasts and I am Polish so I was looking forward to these. I did end up piling them up with berries and they tasted fine..

Hey Kathy! Honestly…it’s hit or miss lol. I made them so pretty this day somehow but often they end up as a crepe pile ? I used a bigger pan and I think let the coconut flour rest a little to absorb and re-oil each time !

These were a total flop for me. Did not stay together at all. The one that I was able to painstakingly peel off of my pan without ruining tasted good, but it was too much work for a single crepe.
